One Year

This week was a crazy week, but a wonderful week. After attending a performance of Swing of Christmas, a play about the Andrews sisters at the History Theater with my Grandma, and being the only person under 60 in attendance (I have never seen so many people with white hair in one place!); I came home packed for my race and finished my Christmas/Birthday/Anniversary present for Zach.

                                          I rushed to my Nordic classic race. Although most would assume that freezing your butt off and pushing yourself to the point of exhaustion is painful, I do it for fun and love it! Skiing can be cold, windy, and physically & mentally challenging, but I love the challenge and the sport really develops perseverance and determination-particularly on the Wayzata High School team (seriously, why does it have to be so competitive?). On Thursday I had a great race that was not only fun, but I also did well (maybe that was due to all the people cheering for me?). Afterwards, I was whisked away (okay, I drove myself) to Caribou Coffee to spend one wonderful hour with my boyfriend, Zach, to celebrate dating for one year, Christmas, and his birthday (I could not imagine having my birthday on December 24th! Talk about being jipped!).

On Saturday I had yet another race. Holiday relays proved to be successful! Both girls classic and skate teams got first and I got 6th overall in the skate race, and was only 2 seconds away from being 4th.

Now my entire crazy family is home for Christmas and we are busy with Christmas baking, watching classic Christmas movies such as The Preacher's Wife and Rudolph, The Red-Nosed Reindeer.

Rain Rain Go Away

Lovely. It is December in Minnesota and RAINING. Ski camp, this weekend, turned to rain camp. I learned some important things this weekend.

1. My Fuggs (fake uggs) are not waterproof...and they have a hole in the bottom.
         **This lead to some uncomfortable wet walks to the dining hall**
2. It is not possible to eat too many cookies, or too much cookie dough. 
        **We didn't need to make cookies out of that cup of cookie dough anyways**
3. It is possible to drink dish soap and not die
       **I was not a participant. Only and observer and encourager**
4. Wisconsin has awful cell phone reception
     **This is another reason to hate Wisconsin**
5. Boys are immature
     **My body is not a target for snowballs, thank you very much**
6. Music is the key to survival for Coach Jim's workouts
     **Would have died without it**
7. My rock skis have seen too many rocks to work anymore
     **They. Don't. Move. At. All.**
8. If I was in the Hunger Games, Abby would kill me first
     **Guess being a trap shooter makes people nervous?**
9. Jessie is a blanket hog
     **Next time steal her blanket, when she steals mine**
10. Whipping your hair too hard can have lasting effects
     **Pain for two days, that would not go away**

Silent Night

Its nights like these that I love. Sitting on the couch snuggled under my zebra blanket, in front of the fire, and beautiful Christmas tree. It’s peaceful, quiet, and relaxing. It really reminds me what Christmas is about. It isn't about the sledding, ice skating, or baking, but it is about Jesus. How it all started with a baby. It started in a cave (not really a barn) -- in a cold, dark, damp (and smelly!!) cave, at that matter. With no other place to lay poor baby Jesus but in a manger, the savior of the world was brought into this world with such humble beginnings, and I am not even thankful for some of the things God has blessed me with every day.

Tonight makes me think about the song, Silent Night. It is one of my favorite Christmas songs, reading and meditating on the words really gives you a different and better picture.

The night and where Jesus was born, was probably very silent. I mean no one really around, just Joseph freaking out that Mary was giving birth in a stable, and Mary freaking out that she was giving birth—besides that it was probably rather calm and quiet.

Shepherds went to visit Jesus. That is crazy! Having an angel—no a multitude of angels—appear in front of you telling you about this baby. Seriously, who cares about a baby? They did. They knew there was something different, something special about him. They quaked in his sight. I would too, seeing the savior of the world like that. I wonder what they did afterwards. Did they tell all their friends? Were their lives different? Or did they keep living on the same way? I don’t know what happened, but I know they reconized the majesty of Jesus Christ as a baby, and I want to do the same. Not just celebrate Jesus being born, but why he was born, and to recognize the majesty of Christ the King. I leave you with the last couple verses of the song. Think about it, what impact does Jesus being born make in your life?

Not So Stolen Ice Cream

This week I had a fun adventure with Jessie's little sister at Rainbow Foods. We ran to the store to get distilled water for our chemistry experiment, while Jessie stayed home in her pajamas (at 1pm on a Thursday afternoon). Our goal was to get distilled water as quickly as possible and go. Well, we walked down the water aisle and would you guess that both brands of distilled water is sold out. EVERY. SINGLE. GALLON. So instead of asking if they had any in the back, we looked around and saw an abandoned cart with a few items-including 2 gallons of distilled water. I slyly looked around, grabbed a gallon and bolted.
Now a shopping trip is not completed without ice cream-good ice cream at that. Naturally we go for the Hagen Daas ice cream, which was on sale this week-with a coupon- $2.48! That is a screaming deal for Hagen Daas ice cream. I looked through 2 catalogs of coupons and could not find the correct coupon. We really really needed wanted the ice cream so I once again slyly looked around, took the coupon off the sign of the door advertising the ice cream sale and once again bolted. In mid-bolt to the check out line I might have accidently cut off an old man....but he congratulated me on winning the race to the check out line, so it's all good!
 I need to get back to studying for finals!

The Thanksgiving Thing

For the past three years, I have spent Thanksgiving in West Yellowstone, Montana with my ski club, putting in lots of hours of training and eating. Burning an average of 1500-2000 calories a day training, means a lot of eating, which I happily oblige! Really, I have no issue with gorging myself on food...except when it is food at the Days Inn provided by some skiing foundation. It is not that it is uneatable-I mean the salad and desserts are really good (when you get some..)-but the rest of the food is...well uhhh creative? I know I am suppose to be healthy, but piling every single dish with all the vegetables they can fit is a little excessive, I mean eggplant really? I am not sure if that is even edible....or their weird obsession with oysters? Please, leave it out of the spaghetti sauce. I have eaten some strange bread called lavasha (it was pretty good) and Naan (not so good), but really WHAT KIND OF NAMES FOR FOOD IS LAVASHA OR NAAN!?

Kaley and I just eat Nutella and Wheat Thin Stixs! Seriously so yummy! We have already gone through 3 boxes of the stixs and one jar of Nutella. After we finished our jar of Nutella we went scavenging for some more yesterday, on Thanksgiving. West Yellowstone is a dead town on Thanksgiving. Well It
is a dead town without it being a holiday.

We did not find much. Only one gas station was open and the ski shop. But what we did find was our friends Sienna and Anna getting creative to pass the time. Sorry for the blurry picture. If you cannot tell what they are doing I will explain. They took a bungee cord rope, tied it around themselves, found a recycling bin and took some cardboard, and pulled each other on the iced coated streets. Directly in the center of town-in the middle of the street. Living life on the edge.

All in all, Thanksgiving was pretty good. Even though we did have tacos for lunch (we did have a normal Thanksgiving dinner though) and there was the unrepeatable whipped cream incident, nothing can beat playing a massive game of sardines in the hotel, running in the woods at night, getting hyper off vending machine food, and snuggling with some of the best work out buddies anyone could ask for. Thanksgiving this year really made me appreciate my mother's cooking and my family's craziness that I missed. Oh well, there is always next year!

Quotes with my Best Friends

My Best friend, Jessica, and I have a pretty unique friendship. Not just anyone can walk into your house-without knocking-and go straight to the freezer for ice cream. 
Last night as Jessie and I were working on chemistry, we had some great conversations. You never know what will pop out of our mouths at 10:30 pm, after hours of chemistry. 

Me: What is the fastest way to make money?
Jessie: *Gets evil look on face* legal or illegal? 
Me: Give me both! 
Jessie: Easy! Prostitution!! Make loads of money fast! 
Me: Is there an option where I don't sell my body? 
Jessie: Rob a bank! 
Me: I think both of those are illegal...

Maddie (little sister): I think I am gonna die!! My tongue is swollen and has little red bumps on it! 
Me: It is called taste buds.
Maddie: Jessie, can I look at your tongue?
Jessie: Sure! *Proceeds to stick out tongue and compare it with Maddie's*
Maddie: Ohhh, I am normal! 

Me: Jessie, can you go stick this on my iHome?
Jessie: What will you give me? 
Me: A hug?
Jessie: *gives me THE look*
Me: Make you bacon?
Jessie: *pops out of bed and puts the ipod away* It is ridicules what I will do for food!

It Started with Blackmail

Wednesday morning I was blackmailed by my boyfriend, Zach- to go to class. Although the class is utterly pointless and I had not done the homework, Zach felt that I needed to go to class. I was not a happy camper, but he promised to shave his attempt of No-Shave November. Half-way through class I received a text saying I needed to go on a secret mission and to check my box after class. In my box was a note with directions to go outside to the car and meet an undercover agent. I walked outside and there leaning up against his car was Agent Goscha decked out in a classy black suit and tie. Without breaking character he proceeded to tell me he was from MI6 and that my help was needed to find a bomb and deactivate it.

 As I jumped in the car and sped away, Agent Goscha handed me a loaded (airsoft) gun. I couldn't help but notice the James Bond music that played in the background and the lack of a British accent on the operative. I guessed that he was undercover as an American operative. With little time before the bomb was scheduled to go off, I had to rapidly figure out this clue: 

 
      I was stumped too, for a little while. 

When we arrived at the park, we raced to find the message left by "Leroy" who was with Al Qaeda.  I found the water bomb, shot off the enemy, and completed with mission with seconds to spare. After Agent Goscha and I walked back to his vehicle, he pulled out a dozen of my favorite flowers (remember what those were from one of my posts?) and asked me to Gadkin at Bethel. To find out what that is, stay tuned! For now this operative needs to sign out, she needs 8 hours of sleep to prepare for her next mission: Chemistry

This last week I was campaigning for Michelle Bachmann. She won the election...barely, but she pulled through because, I am sure, of my heartfelt phone calls I made. I had some very funny-and sometimes rude-phone calls. Some of my favorite responses were:

Me: Hello! I am calling on the behalf of the Republican Candidates reminding you to get out and vote...
Man: No, I am voting for Mickey Mouse
Me: Well can I encourage you to vote for....Do you know where your polling place is?
Man: Yes! Disney World!
Me: Well Sir....
(FAVORITE PHONE CALL EVER!)

Me: Hello! My name is Gretel and I am calling on the behalf of the Republican Candidates reminding you to get out and vote...
Old Man: Why?
Me: Because...Can I encourage you to vote for Mitt Romney, Michelle Bachmann...
Old Man: I will never vote for that COMMUNIST!
Me: Sir, she is not a communist...
Old man proceeds to tell me his life story and how he is a republican farmer turned democrat...Such a fun conversation!

Me:....Can I encourage you to vote for Mitt Romney, Michelle Bachmann...
Old Lady: Are you Crazy???
Me: No, Ma'am, no I am not.

These are just a few of my 500 conversations (I am not exaggerating) that I had with people. I really wanted to act like this baby on the phone to a couple people. Michelle Bachmann did win-by the skin of her teeth, but she pulled through. I am sure it's only because of my spectacular dancing on the street corner while sign waving.

...those Romans

I don't know if it is just me, but I the ancient world has a lot of nude pictures. Not only pictures, but graphic sculptures. Seriously, we blame the perverts of our modern society with the porn problem of today, but I say, BLAME THE ROMANS! I mean seriously, wouldn't it be easier to carve a tunic, or whatever they actually wore, into stone, than the unmentionables...in details? I know the statue, David, that sits in the Galleria dell' Accademia in Florence (I had to prove my smarts), is considered priceless, breath taking art, but does it take your breath away because of how artistic he is, or from the shock of seeing a 17 foot statue of a naked man. Mine is decisively the latter.  Personally, I would  find David much more appealing if he looked like this...

How difficult would that have been? I think his breath taking ability just went from 1 to 10 with a quick covering of a tunic...or skirt, whatever your opinion leads you to believe. I mean with the tunic (or if you prefer the tutu)  his attractive level shoots way up, then I would understand the act of losing your breath by his sight. But that does not lesson the fact that its in marble. Fake. Not real. Inanimate. So no matter how you look at it, David is still a statue. A PG-13 one at that matter, and I think loosing your breath over a statue is a little...shall I say it? Excessive. I am sure some art nuts are plotting my murder this very second. Oh well, I still think the ancient Romans should be blamed for today's pornography.

Blessings


     
      I am so blessed. SO BLESSED. I am reminded of this every single day when I wake up in my warm bed and every night when my mom prays with me before I go to sleep. 
     Although I do not have a perfect family and everything does not work out perfectly, God has blessed me so incredibly much. He has blessed me with an incredible family who loves me, loves God, and provides and cares for me. He has given me a great group of friends, who I can trust and rely on for support. He has given me friends, when I thought I did not have any (7th grade with Jessie, that is a whole other story). He has given me a wonderful boyfriend who builds me up and encourages me in my walk with the Lord. He has blessed me with athletic talent and has made me so uniquely different than everyone else. 
     Everyday God is reminding me to not take things for granted. Things can change so quickly. He keeps reminding me to not only praise him in the good times, but to praise him in the storm too.
      In my relationship with God, it is so easy to just seek him out when it feels as though everything is crashing down around me and to just forget about him when things are going well. Likewise, it is also easy to find ways to praise God when there are sunny skies, but God is continually reminding me to praise him, even when the dark clouds come rolling in, because at the end of every storm, there is a rainbow. 

So everyday I want to bless the Lord. David gave such a great example of this in Psalms 103: 1-5
Bless the Lord, O my soul,

    bless his holy name!

Ways to my Heart

There are a couple, simple, and easy ways to my heart. Only a few, very intelligent people have figured them out.  


Its like holding edible fish shaped gold food in your hand!  I concentrate so much better when I have a small, crunchy snack next to me. Maybe that is because I am a bored eater? But even my college prof said crunchy snacks keeps one awake. Goldfish are perfect because they aren't super filling and help me concentrate! WIN-WIN!



mmmmm now nothing can beat Olive Garden's Chicken Fettuccine Alfredo! In fact I have some sitting in my fridge right now from my date night with my boyfriend, Zach :)
Pink roses. I love pink roses. Well, I like any kind of flowers! I think the first time I was ever given flowers was by my super thoughtful, older sister Megan after a play performance. I hardly ever get flowers, but when I do, I keep them for a ridiculously long time. I learned that Trader Joe's has really cheap flowers sometimes! So if you ever need a flower fix go to Trader Joe's! 

Dove dark chocolate!! Pure Bliss! Makes me crave it just thinking about it! 

Now you know the simple easy ways to start buying my love. I have a lot more things I could add to this list, but I think it would be endless if I did.

Highlights and Bruises

This weekend I had the opportunity to volunteer up at Camp Shamineau! Camp has a special place in heart. I have spent the last 4 summers of my life there, working-serving camp and being a counselor. Being a counselor is one of the most rewarding jobs. Not only do I get to be crazy, weird, and goofy with kids, but I also have the opportunity to share the love of Jesus Christ with the kids. I always love to come back in the Fall and work some of the Fall Flings and in the Spring, Mother-Daughter. Camp Shamineau puts on some pretty crazy and extremely fun retreats. This weekend I ran a couple activities: Karoke (I even blessed the crowd with some of my incredible gifts of singing and dancing), cleaning the bathrooms, working on the High Ropes course-I got Shamineau belayed certified-, and campfire donuts. I think the hardest job was campfire donuts-it took a lot of self control not to eat more than the 7 donuts I did eat.
Not only did I get to do all those fun things, but I also sprained, rolled, twisted? my ankle. Starting with breaking my nose at camp this summer, getting hurt has not ended yet. Normally I don't get hurt very much-I am just a little klutzy. But in the last 4 months I have: broken my nose, sprained my ankle, bit by a deer fly (I am allergic to their bites), messed up my knees, stomach issues (stomach ulcer?), and now rolled my ankle-again. Thankfully only one...scratch that two... of those things have required a doctor's visit. I am hoping that this will be the end of all the PAIN? My friends think I am a druggie, because you can hear the clinking of my baggie of my painkillers as I walk. Oh well, even though I have been hurt so many times this summer and fall, I am going to keep blessing the Lord, just as my favorite song reminds me too.

Hipster

Normally, I am not a hipster. In fact, I usually shake my head in confusion at hipsters. I mean really you need to stand out and look ridicules just to make a point? But I am very proud of the fact that I have had a hipster moment! I started listening to Conor Maynard a year ago when I stumbled upon him on YouTube. Last month I was listening to KDWB and one of his songs came on. I was shocked and extremely excited to know that I had discovered music that wasn't mainstream!

My other discovery was Cher Lloyd. Although I didn't start listening to her before I heard her song "Want You Back", I did start discovering her other songs, before she became totally mainstream. I really like how sassy Cher Lloyd is in her music :) This is one of my favorites from Cher.
I am not sure how much I like the half shaved head...but I guess whatever rocks your boat? Hipster! I still do not understand them!

P-A-R-A-D-E

At last minute, Nordic Skiing decided to make a float and participate in Wayzata's homecoming parade today. The float consisted of a wagon, with a Nordic skier sitting in it, pulled by one of our male skiers surrounded by 5 roller skiers. It was...interesting to say the least. Our march through main street in downtown Wayzata lasted a full 12 minutes before it was over and we sprinted back to our cars to warm up, as it was freezing! And that is the story of the second parade I have ever been in (the first one consisted of smokey the bear and incredibly embarrassing yellow vests). 

I decided to finish off the day with the girl I babysat by making Peanut Butter Cup Sprinkled Brownies! The recipe is, of course, found on Pinterest. A lucky boy at college will be getting these tomorrow, since I heard he loves brownies. 

I will be getting my game on tomorrow at the Bethel homecoming football game, after a nice ski practice at Minnehaha Falls. Have I mentioned that I still do not understand football?

The Huntress

Sadly, I haven't made any new Pinterest recipes lately. Although during one of my lectures the other day I did pin 14 pictures of food that I will make...someday. This weekend and week instead I was a very studious college student...and I went hunting with my family.

 As I sat in the deer stand  last weekend I had a lot of time to ponder what it would be like to be Katniss Everdeen fighting in the Hunger Games. When I go bow hunting with my dad I feel like Katniss and not just because I am using a bow. I was sitting high in a tree (just like she did), waiting for some prey to come that I could shoot (just like she was looking for the other tributes), a bird almost attacked me (kind of like the Trackerjackers), I almost fell out of the tree when it became very windy (that is why she tied herself into the tree, what a smart girl!), and finally we were both sitting in the tree out of duty, not necessarily because we always dreamed of hunting (or being in the Hunger Games), but to fulfill our duty. Mine to do something my dad enjoys and hers to take the place of Prim, so Katniss and I are alike....very alike.

The Truffle Tragedy

This is a tragic tale of truffles. I found this incredible truffle recipe on Pinterest, Peanut Butter Graham Cracker Truffles. I was extremely excited to make these little suckers! I even had ghirardelli chocolate to dip them in, and ghiradelli chocolate chips to roll them in, so these were pretty legit truffles!

The balls of peanut butter are what the truffles look like before they are dipped in chocolate. All the truffles were dipped in ghirardelli chocolate, but some are rolled in rice crispys, heath, and ghiradrdelli chocolate chips. 
I made these the day we were heading home from the cabin. I needed them to freeze, so I placed them in the freezer until we left, I told my mom to remind me about them. Now this is were the tragedy happened! As we were driving along on our way home, I realized that I had LEFT THE TRUFFLES IN THE FREEZER! I was so dissipointed! I was super excited to share them with people, but they were left in the freezer :( 
I have a small glimmer of hope, my dad and my two oldest sisters went up to the cabin this weekend, I asked them to bring my truffles home...if they don't eat them first!
Crossing my fingers they will make it home!

A Blast From The Past

This time, this idea did not come from Pinterest! I made Marshmallow Croissants.
These little things are yummy, sugary, and sweet....ohhhhh and drizzled with frosting :)

They are marshmallows rolled in butter, then cinnamon sugar, end wrapped in a crescent roll. When you bite into them, the marshmallow is GONE! Because it melted in the oven. These are literally bites of heaven...because they are suppose to represent Jesus rising from the grave and everyone finding the tomb empty. When I was younger my family always made these during the Easter season with some friends. Although that tradition has ended, we still make these at least once a year, if not more. These are incredibly easy to make and very yummy!

The Expedition III

I love cookies. I love chewy cookies. I love cookies with chocolate in them. Man, I just love cookies in general, they are delicious little bits of heaven that can turn a whole day around. One day up at the cabin I decided to go ALL out and make lots of cookies! First I made chocolate with white chocolate chips cookies, then I put a new twist on the classic Peanut Butter Hershey Kiss cookies.
There is a thing about peanut butter and chocolate that immediately sends me into a blissful state. The sweet mixed with the salty....mmmmmmmmmm I love peanut butter and chocolate together so much!
Instead of using Hershey Kisses in the middle of the cookie, I used mini Reese Peanut Butter Cups!!! I made them a bit smaller than normal and they were perfect bite-sized cookies.
I proceeded to eat these cookies all day.

My Expedition II

I have seen this recipe on Pintrest multiple times and every time I start drooling. I love cinnamon rolls and in waffle form they would be even more delicious!

So I decided to try them! I just flattened the cinnamon rolls, placed them on my grandma's 50 year old waffle iron and....


...There you go! Cinnamon roll waffles! Serve them on a plate and drizzle them with frosting...or as I like to do, smother them in frosting! I really love a good cream cheese frosting! After I went through two, 4-week cake decorating sessions through Wilton when I was in 7th grade, I really started to hate the taste of buttercream frosting. I find it absolutely disgusting. Making two pounds of buttercream frosting every week for six weeks does that to you!

My Expedition Part I

Before I mention the next thing I made at the cabin, I think I need to mention the very first Pintrest recipe I ever tried, which was two weeks ago with my friend, Natalie. Natalie also has a Pintrest Obsession. One day when she came over we decided to make Peanut Butter Pretzel Bites. These were little bites of heaven. They were so yummy that my mom begged me to let her use them for snacks for her Bible Study. Not only did this recipe combine the scrumptious combination of peanut butter and chocolate, but it also included pretzels! You get the sweet, the salty, and the crunchy! A perfect combination. 


Along with these Peanut Butter Pretzel Bites, Natalie and I made chocolate dipped pretzels, Jumbo Chocolate Chip cookies (Seriously one of the best chewy chocolate chip cookies I have ever made!), and chocolate dipped animal crackers. Natalie spotted my animal crackers and I knew we had to dip them in chocolate!

Later on, some of the cookies from that day were all packaged into a little pink shoe boxed and placed on a very lucky college boy's desk when he wasn't looking. 

This was the first recipe that started my crazy cooking kick.

My Pintrest Obsession

I have had a Pintrest intrest...well more obsession since my best friend, Jessica, introduced me to the site. At first I though it was rather silly and strange, as I first did with Twitter. But then I saw the light. I now spend numerous minutes (possibly hours, but I will never actually admit it) on Pintrest.
 I am rather slow with catching onto social media, I never understood Twitter either. I mean who really cares about Tweets and what celebrities are saying, I though Facebook was good enough for me. But I soon learned I was wrong about that one also. I created my Twitter one day when I was bored at camp, but I never tweeted until 6 months later when all my nordic skiing friends said I "just have to tweet". I am now an avid Tweeter and I do not regret it. I will admit, unashamed, that I love Twitter.
Anyways, back to Pintrest. I love Pintrest! Between all the cute clothes, room ideas, cooking ideas, and quotes, I am going to be broke and very fat when I get older. There are so many different ideas that I want to try and to cook! 
This weekend I had the opportunity, up at my cabin, to put my Pintrest obsession to action. I looked through my 19 food pins on Pintrest and decided on a couple, simple recipes I would try. My first blog post will include my first creation.

My first one was pizza on the grill.


 Now my family likes to make fun of me, particularly my very enduring younger 15 year old sister, and my cooking skills. It is not that I am a bad cook...I just don't try very often. When I do try I make fabulous food (or so I like to think...), I just do not try very often. 

THIS pizza proved my family wrong. I can be a very good cook when I want to be and this weekend I was inspired. This pizza (which I did pick out all the ingredients AND go to the store to pick them up, thank you very much mommy for your credit card :) has mushrooms, spinach, onions, green onions, Italian sausage, Italian seasoning, mozzarella cheese, and parmeson cheese. I also made a delicious Alfredo pizza that night. 

All in all, I got a thumbs up from my cook-wanna-be sister, Maddie, My mother, and my grandma. I would say it was a pretty good start for someone who doesn't normally whip up restaurant ready food. Thursday night, I definetly considered opening a pizza parlor. Not only was it fun to make, it was yummy to eat.
